Ingredients

Prawns – 500g (cleaned, deveined)

Shallots – 10 (sliced)

Garlic – 6 cloves (crushed)

Ginger – 1 inch (crushed)

Tomato – 1 (chopped)

Green chili – 1 (slit)

Turmeric – 1/2 tsp

Red chili powder – 1 tsp

Coriander powder – 1 tsp

Garam masala – 1/2 tsp

Salt – to taste

Curry leaves – 2 sprigs

Kolumboo Coconut Oil – 3 tbsp

Instructions

Marinate prawns with turmeric, chili powder, and salt. Set aside.

Heat coconut oil. Sauté shallots, garlic, ginger, and green chili till golden.

Add tomato, cook till mushy. Add remaining masalas and fry.

Add prawns and stir on medium flame till water evaporates.

Roast with curry leaves on low flame till prawns are coated and caramelized.
