Kerala banana chip made using raw nendran bananas and pure coconut oil. Village-style preparation includes slicing with a traditional aruvamanai and deep frying in cold-pressed oil till crisp.

Ingredients

Raw nendran banana – 2 large

Turmeric – 1/4 tsp

Salt water – 1/4 cup

Kolumboo Coconut Oil – for deep frying


Instructions

Peel and slice banana into thin rounds. Soak in turmeric water for 5 mins.

Heat Kolumboo Coconut Oil.

Drop chips into hot oil. Fry on medium flame.

Midway, sprinkle 1 tbsp salt water (carefully!) to season.

Fry till bubbles subside and chips turn crisp.

Drain and store in airtight container once cooled.
