Ingredients

Ash gourd – 1 cup (cubed)

Red cowpeas (vanpayar) – 1/2 cup (boiled)

Green chili – 1

Coconut milk (thin) – 1 cup

Coconut milk (thick) – 1/2 cup

Salt – to taste

Kolumboo Coconut Oil – 1 tbsp

Curry leaves – few

Instructions

Cook ash gourd with green chili and salt in thin coconut milk until soft.

Add boiled red cowpeas and simmer for 5 minutes.

Add thick coconut milk, heat gently (don’t boil).

Finish with Kolumboo Coconut Oil and curry leaves.
