Karuvadu Thokku is a fiery, aromatic dry fish masala made in many coastal and inland Tamil villages. The dry fish is first soaked and then fried in rich masala till the oil seeps through. With plenty of shallots, garlic, and Sastha Sesame Oil, this dish brings that punchy umami hit that pairs best with curd rice or rasam rice.

Ingredients

  • Dry fish (nethili or vella meen) – 1 cup (cleaned, soaked 15 mins)
  • Shallots – 15 (sliced)
  • Garlic – 8 cloves (crushed)
  • Tomato – 2 (chopped)
  • Tamarind pulp – 1/2 cup
  • Red chili powder – 1 tsp
  • Coriander powder – 1 tsp
  • Turmeric – 1/2 tsp
  • Salt – to taste
  • Sastha Sesame Oil – 4 tbsp
  • Curry leaves – 2 sprigs
  • Mustard seeds – 1 tsp

Instructions

  • Wash and soak dry fish for 15 minutes. Drain completely.
  • Heat sesame oil. Fry dry fish lightly till fragrant. Set aside.
  • In the same oil, temper mustard and curry leaves.
  • Add shallots and garlic. Sauté till soft.
  • Add tomatoes and cook till mushy. Add chili, turmeric, coriander powders.
  • Pour tamarind pulp. Simmer till oil separates.
  • Add fried dry fish and cook covered for 10 minutes.
  • Serve with rasam rice or curd rice.
