A rustic kuzhambu that makes mushrooms shine in a way you’ve never tasted before!

Ingredients

  • Button mushrooms – 200g (sliced)
  • Tamarind – small lemon-sized ball
  • Sastha Sesame Oil – 3 tbsp
  • Mustard seeds – 1 tsp
  • Fenugreek seeds – 1/4 tsp
  • Shallots – 10 (sliced)
  • Garlic – 5 cloves (crushed)
  • Curry leaves – few
  • Turmeric – 1/4 tsp
  • Sambar powder – 1 tbsp
  • Salt – to taste

Instructions

  • Soak tamarind and extract ~1.5 cups pulp.
  • Heat sesame oil and temper mustard, fenugreek, and curry leaves.
  • Add shallots and garlic. Sauté till golden.
  • Add mushrooms and cook till water releases.
  • Pour tamarind pulp, turmeric, salt, and sambar powder.
  • Let it simmer for 15 mins till thick and flavorful.
  • Serve hot with steamed rice and poriyal.
