Ingredients

Ubari Urad Dal – 1 cup (soaked 6–8 hours)

Green chilies – 2 (finely chopped)

Black pepper – 1/2 tsp (coarsely crushed)

Ginger – 1 inch (grated)

Curry leaves – 1 sprig (finely chopped)

Hing – a pinch

Salt – to taste

Water – as needed

Groundnut Oil – for deep frying

Instructions

Soak urad dal for 6–8 hours. Drain and grind in a wet grinder to a fluffy paste with minimal water.

Mix in salt, hing, chilies, ginger, pepper, and curry leaves.

Heat oil. Wet your hand, take a lemon-sized dough, shape with a hole in the center, and drop into hot oil.

Fry on medium heat till golden and crisp. Serve hot with coconut chutney.
